If you are after a recipe to impress someone or maybe you just want to treat yourself to an incredibly delicious meal, look no more! I have a delightful meal that's not only mouthwatering and heartwarming. This butternut squash risotto is also super nourishing and a weekend-fave dinner option.

We love comforting food and whilst regular short gain rice can do the trick, risotto is just at another level. I guess the creamy texture and the overload of flavours is what makes a bowl of risotto so inviting.

Risotto is a rice dish traditional of Italian cuisine and if there's anyone in the world that knows about comforting food, I dare say, is Italians. So they didn't just come up with a rice dish. They added an incredibly creamy texture that will get you addicted and feeling right at home. 

Butternut Squash Risotto ingredients

We know that to cook the rice we just need to throw it in boiling water and let it be until it's nice and tender. Well, this is one of the main differences between cooking regular rice and risotto. For this recipe first, we need to sauté the rice for a couple of minutes until it's translucent. Then we will add the liquids while we stir the deal.

This might sound odd and go against everything we know about cooking rice. But, what we are trying to do here is get the starch in the rice out and about which will make everything creamy and sticky. So, another important thing to keep in mind is not to rinse the rice before you cook it. 

Risotto is just the beginning of this delicious meal. You can add all sorts of ingredients and really get creative here. I had a butternut squash hanging around my kitchen. So I decided to put it to good use and came up with this butternut squash risotto recipe. 

Butternut squash has a sweet, somewhat nutty taste. Which makes our dish even more comforting and perfect for those cooler days of the year. Aside from being super yummy, butternut squash will also add a ton of nutrients and a handful of health benefits.

This hearty vegetable has a ton of vitamins and minerals, is a good source of fiber and low on calories. It promotes eye health, is great for your skin, lowers cholesterol and blood pressure, improves digestion, the list is really long!

To cut the story short, this butternut squash risotto is delicious, creamy comforting and packed with nutrients. It will take you about 45 minutes to cook this recipe. Most of this time is to allow the rice to cook thoroughly. All you will need to do while this is happening is to stir a bit and enjoy the fragrance that will invade your home. 

Once the butternut squash risotto is ready you can serve it in individual bowls and sprinkle some toasted pine nuts. It's a nice extra touch. But if you can't find them, or if they are over your budget it's no big deal. Your butternut squash risotto will be incredibly delicious regardless!

Ingredients

For the risotto

  • 2 cups baby spinach (washed)
  • ½ tsp black pepper
  • 1 lb butternut squash (peeled and diced)
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ cup nutritional yeast
  • 1 tsp sea salt (optional)
  • 2 medium shallot (thinly sliced)
  • 1½ cups short-grain brown rice
  • 1 cup soy cream
  • 2 cups vegetable broth
  • ½ cup white wine (optional)

For the garnish

  • 2 tablespoons pine seeds (toasted) (optional)

Directions

  1. Heat up the olive oil in a big pot and sauté the shallot for about 5 minutes, add garlic and sauté for about 30 seconds until fragrant.
  2. Add the diced butternut squash pieces and stir fry for an additional 2 minutes.
  3. Add the risotto rice and stir fry until translucent.
  4. Add the wine and boil for about 2 minutes while stirring constantly.
  5. Add the rest of the risotto ingredients gradually while constantly stirring while you pour the liquids in and stir the baby spinach in last , just before serving.
  6. Adjust taste and serve the butternut squash risotto with some toasted pine nuts on top, enjoy!
