Who else is super excited about Christmas being around the corner?! I wish I could play it cool but in all honesty, I've been planning this year's vegan Christmas dinner for a bit longer than I'd like to admit. I have a few dishes on the menu, but the stars and main dish of the night these delicious are Cauliflower medallions.

The best part for Christmas is being surrounded by the people you love. In some cases, this doesn't happen on a regular basis or as much as we'd like to. My family is spread all over different countries, and our time together is quite limited so we really look forward to these special occasions. 

As you might know by now, I love making food and cooking for others is for me a way of showing appreciation to those around me. So Christmas is the perfect excuse to get all those people in the same room and stuff their faces with delicious food.

For this vegan Christmas feast, I put together a few easy and super delicious recipes. Some all-time classics turned vegan, some not so classic but all equally mouthwatering and crowd-pleasing. You will have vegans and non-vegans asking for second servings without a doubt!

For the main dish, I made a cauliflower recipe that also has some Beyond minced meat mixed in. This way we have a much more hearty, flavourful, and filling dish. You will be able to feed a lot of people very easily.

Aside from the cauliflower and the Beyond meat, you only need breadcrumbs, porridge oats, ground nutmeg and a bit of oil to fry the medallions. This is probably one of the simplest vegan Christmas recipes you will stumble upon this year. 

We also made the preparation part really easy for you. First, you will need to boil the cauliflower for about 8 minutes. While this is happening, fry the minced beyond meat until slightly brown. Use an immersion blender to mix these two ingredients together and create a smooth mixture. Once that's done add the oats and the nutmeg.

Here comes the fun part of this recipe! Get your hands in that mixture and form the medallions. You can make them whatever size you prefer. As long as they are not gigantic and super hard to handle when you are frying them, is up to you. 

Before throwing the medallions in the oil, coat them with breadcrumbs so that everything sticks together. This will give you a really nice crispy coating. The key to avoiding soggy medallions and getting them extra crispy is to allow the oil to heat up enough before you fry anything in it, so make sure it's sizzling hot. 

It is very easy to make this delicious cauliflower recipe. It goes perfectly well with the shiitake green beans and the vegan mushroom gravy recipes we prepared for you as well. Ingredients

  • 8 oz beyond minced meat
  • ½ cup breadcrumbs
  • 1 head cauliflower (cleaned and chopped)
  • 1 dash ground nutmeg
  • 4 tablespoons olive oil
  • 1 cup porridge oats

Directions

  1. Heat up a pot with water and boil the cauliflower for about 8 minutes.
  2. Heat up a skillet and stir fry the minced beyond meat until slightly brown.
  3. Add cauliflower and beyond meat to a bowl and use an immersion blender to create a smooth mixture .
  4. In bowl combine the cauliflower, beyond meat, nutmeg and oats, add some water if needed and adjust taste.
  5. Use your hands to form the medallions, and coat them with breadcrumbs.
  6. Heat up some oil in a frying pan and fry the cauliflower medallions until golden brown from all sides.
