We can all use a hearty and healthy soup every now and then. So today we are adding a super easy to make recipe to our book that you and your family will love. Fasolada is an incredibly delicious dish and I would dare say it is everything you've ever dreamed a soup should be. 

A few months back we made a Ribollita, a Portuguese bean soup that really reminds me of Fasolada. If you liked that recipe you are going to love this one. Both soups are hearty and healthy, loaded with flavour and a big deal in their country of origin.

We love food that has deep roots in its culture and Fasolada is one of them. The soup is an absolute staple of Greek cousin, some people even say it's Greece's national dish. They even have a Fasolada Day! I'm not sure what the celebration entitles but seems like a big deal.

Fasolada is so popular in Greece for many reasons. First of all, it is incredibly nutritious, it has a ton of vitamins and minerals, protein, antioxidants, fiber, and a good amount of the carbs we want to be consuming.

The health side of things is important, but here at we also value recipes that are practical, easy to make and affordable. Fasolada is all of those things. You can have it done and ready in 30 minutes, there's no crazy prep needed and all the ingredients are easy to find and on the cheap side. 

The soup is so inexpensive because all there is to it is white beans and a bunch of veggies with a few spices. Doesn't sound like much, but believe me, you don't need much more. Fasolada is so incredibly flavourful!

The veggies in this soup are quite varied. I even managed to throw some fruit in there as well. You can only imagine how incredibly colourful, nutritious and flavourful this soup comes out to be. 

The vegetables alone make Fasolada really flavourful. And we are roasting most of the veggies before we throw them in a pot where they'll simmer for a while. This too will add an extra kick of flavour. We just need a few herbs and spices to closed the deal on this dish.

Fasolada is meant to be a simple yet hearty soup. To get that cosy taste we need some herbs. We'll add a few bay leaves and some rosemary, and your typical salt and pepper. Some people don't even need the salt to get the flavour just right. 

Usually, I serve the soup with a few slices of toasted bread. I don't know what it is about bread but somehow it turns your already hearty dishes into absolute comfort food. Fasolada doesn't need much help, but we'll take the bread anyway! 

We love healthy hearty soups and we can't wait to get our hands on a big warm bowl of this tasty soup.

For the soup

  • 1 medium apple (chopped)
  • ½ cup black olives (chopped)
  • 2 tbsps capers (chopped)
  • 2 medium carrot (chopped)
  • 2 medium celery (chopped)
  • 2 cups crushed tomato
  • 4 cloves garlic (minced)
  • 1 tbsp maple syrup
  • 2 tsps olive oil
  • 1 medium onion (thinly sliced)
  • 300 water
  • 1½ cups white beans

For the herbs

  • 4 leaves bay leaf
  • 3 dashes black pepper
  • 1 tbsp dried rosemary
  • 2 tsps sea salt (optional)

For the bread

  • 3 slices whole grain bread (toasted)


  1. Use a big pot and heat up the oil, roast the onion for about 2-3 minutes then add the garlic and sauté for 30 seconds.
  2. Add apple, carrot and celery and roast for about 5 minutes.
  3. Add the rest of the soup ingredients and the herbs and let is simmer for 15 minutes until the vegetables are soft.
  4. Adjust taste and serve in a bowl with some bread on the side, enjoy!
