We are here with yet another easy vegan meal! This time we came up with an incredibly delicious, easy-to-make, hearty vegan rice dish. We are diving into Tex Mex cuisine to get all the right flavours and the most delicious ingredients into this Fiesta Rice!
I have a serious obsession with Tex Mex cuisine. It is so incredibly flavourful! I really love that most of its dishes are made with fresh colourful ingredients. And it uses herbs and spices in a way that you always end up with the most hearty and incredible meals on your table.
And, we absolutely love hearty dishes that at the same time, feed both your belly and your soul. That is what this tasty Tex Mex rice will do for you! And we made sure we included a bunch of different ingredients so that you and your loved ones have a well-rounded meal on your plate without much fuss.
When I think of Tex Mex cuisine, I immediately think of beans, rice, and a colourful plate. We included all. And to get all those colours in this recipe, I chopped some red bell pepper, onion, tomato and threw in sweet corn kernels.
Then, of course, we need all the seasoning that makes Tex Mex food so delicious. This is where the magic really happens. There are so many ingredients we get to play with so sometimes it's hard to choose. All the different spices, herbs, and the different combinations add such a unique taste to food.
We have a good variety of ingredients in this recipe so I decided to keep it minimalistic with the seasoning. This way, I don't take away the spotlight from everything else that is happening here. So, I used cumin, sea salt, lime zest, and lime juice. And of course, fresh cilantro.
All these veggies in our vegan rice dish will bring a good variety of nutrients to your diet. And to kick it up a notch, we also mixed in black beans and quinoa with the rice. We are getting more iron, fiber, and a whole lot more protein with this combo.
We have a fair bit of ingredients however this is still a super easy vegan meal to prepare. Once you've cooked the rice and the quinoa in boiling water all you need to do is to mix everything together. Yep! Just like that!
Once everything is mixed together, check the taste to make sure it's exactly how you like it. You can serve it as a main dish or as a side as well, hot or cold, for lunch or dinner. You can make a big batch and fill your vegan lunch box throughout the week. There are so many possibilities!
Oh! And if you need to feed a crowd or you need a dish to bring to a picnic, this vegan rice dish is perfect! It's an absolute crowd-pleaser that won't have you breaking the bank. Everyone will be so pleased and impressed with your cooking skills.
