Pasta is a life saver when it comes to easy, quick meals that will leave you absolutely satiated. There are a million ways to cook a good pasta dish but today we want to keep it simple. So we are making a fusilli with broccoli that even though it is very easy to make it is incredibly delicious.
Fusilli is just another variety of pasta. It's shaped like a curly spiral or a corkscrew. I think this makes it a great option to use on recipes that are made with thicker sauces. The sauce and little bits and pieces of the solid ingredients go in between the creases of the pasta. That way you get a bit of everything in every single bite.
Also, this type of pasta is much more appealing to kids than some other kinds. If you need to feed little ones fusilli might make it a bit easier on both, you and them. Fusilli is easier to handle than spaghetti, linguini or other messier types of pasta. And if your little one is learning to eat, fusilli is easier to pick up with a fork or with their little cute hands.
Since we wanted to keep this recipe simple so you can whip it together midweek when you need a quick feed I created a sauce that's packed with flavour but also easy to make. It has just a few ingredients that are easy to get if you don't already have them in your kitchen.
The sauce has a slightly nutty flavour from the almond. The nutritional yeast will add a slight savoury cheesy touch. This will make your pasta legit and will balance the flavour of the broccoli since it can be a bit overpowering for some people.
I don't really use broccoli as much as I'd like to but it has a ton of benefits so I want to incorporate it into my recipes a bit more. Back in the day when I first moved out of my parents's house I pretty much survived on broccoli.
Back then I was somewhat new to cooking and even though I've always enjoyed it, it was more a matter of cooking to survive than cooking for pleasure as it is now. So, a lot of my meals included boiled broccoli with butter and salt. I was still vegetarian and this was so easy to put together, so, why not?
Nowadays, I rarely serve plain broccoli but I could easily eat a bowl in a single sitting. I still love its flavour and I can't get enough of how good it is for you. It's packed with vitamins and minerals. It's a great source of fiber, it has many antioxidant and anti-inflammatory properties and is quite low on calories.
A few florets of broccoli will make our fusilli incredibly flavourful, filling, and healthy. And the vibrant green is a great touch of colour as well. We love having some colour on our plates and you will love this fusilli pasta dish!
