Mushroom Herb Quinoa

For the mushroom

  • 1 tbsp balsamic vinegar
  • 1 dash black pepper (ground)
  • 2 tbsps frozen garden herbs
  • 1 tbsp maple syrup
  • 454 g mixed mushrooms (thinly sliced)
  • 1 tablespoon olive oil
  • 1 tsp sea salt
  • 1 medium yellow onion (thinly sliced)

For the quinoa

  • 170 g quinoa (rinsed)
  • 473 ml water


  1. Cook the quinoa until it's soft and all water is absorbed (around 15-20 minutes).
  2. Use a frying pan and heat up the oil, add the onion and stir fry until fragrant.
  3. Add the mushrooms and fry until no more water comes out and they turn slightly brown, stir occasionally.
  4. Add the quinoa and the remaining ingredients to the skillet with the mushrooms.
  5. Mix well and adjust taste before serving, enjoy!
