For the Borscht

  • 2 leaves bay leaf
  • 1 lb beet (skin removed and diced into 1 inch (~2cm) pieces)
  • 1 medium carrot (chopped)
  • 2 medium celery (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsps maple syrup
  • 1 cup nutritional yeast
  • 2 tablespoons olive oil
  • ½ lb potato (cleaned and chopped)
  • 2 tbsps tomato paste
  • 5 cups vegetable broth
  • 1 tablespoon wheat flour
  • 2 cups white cabbage (chopped)
  • 1 medium yellow onion (chopped)

For the topping

  • 1 tsp black pepper (ground) (optional)
  • 2 cups soy yogurt

For the bread

  • 4 slices whole grain bread (optional: toasted)
