Soba Noodles with Carrot and Zucchini in Miso Broth

For the Vegetables

  • 2 medium carrot (julienne)
  • 4 tbsps soy sauce
  • 2 tablespoons toasted sesame oil
  • 2 medium zucchini (julienne)

For the Noodles

  • ½ cup miso paste
  • 5 oz soba noodles
  • 2 tbsps soy sauce
  • 3 tbsps wakame seaweed
  • 5 cups water


  1. Use a big skillet and heat up the sesame oil and the soy sauce to fry the vegetables until slightly soften for about 5 minutes.
  2. Use a big pot and add all the ingredients for the noodles, simmer the soba noodles until soft for about 5-10 minutes.
  3. For serving use a big bowl and add the noodles together with the broth and the vegetables on top.
