If you are looking for a refreshing snack that is super delicious and healthy at the same time, we got you covered!! We are making a pretty pink and super creamy Strawberry Cheesecake smoothie that is to die for!
The beauty of this pink smoothie is not only about looks. We love its pretty colour but the dessert-like taste of this drink is where the real beauty is. I would say this is an upgrade form your usual strawberry smoothie.
We kept it simple but with lots and lots of flavour. We got a few different ingredients in the mix that will give this pink smoothie that strawberry cheesecake taste we love so much. And even though is really creamy, it is still pretty light so you can have it at any time throughout the day without feeling groggy afterwards.
The creamy consistency comes mainly from the cashew nuts. I add them raw and just as they are. Some people like to soak them ahead of time to soften them up a bit but it is up to you. Cashews have enough oil in them to give a soft velvety texture to this recipe.
Also, I am using frozen strawberries. This makes the consistency a bit thicker than if I added fresh ones. I always have a bag of berries in the freezer to make my life easier. Since strawberries have such high water content when you blend them frozen you instantly get a frappe without messing with the taste of this strawberry cheesecake smoothie.
Since cashew nuts and strawberries are not enough to make a smoothie taste like dessert, we also need coconut flakes, lemon juice and zest, a dash of sea salt, and vanilla extract. These are the ingredients that you would find in a few cheesecake recipes.
It made sense to just throw the same ingredients in a blender to make some magic happen. In just a few minutes we will have a super delicious pink smoothie to snack on. And we are getting refreshed and nourished at the same time! It's a win all over!
I added unflavoured sun warrior protein powder to the mix as well. This helps me get my daily protein requirements in my belly very easily. The strawberry cheesecake smoothie has 23gr of protein. So good, right?
I usually have unflavoured protein powder at home so I can add it to a bunch of different recipes. But I've used vanilla flavoured as well and it comes out really nice. It can be a bit sweeter, that's why opt for the first option.
To finish off this amazing recipe I always add a little extra crunchy touch. I like crumbling some pieces of graham cracker and adding them to the bottom of the cup where I'll be serving the smoothie. It's so nice to get that little surprise at the end of your snack.
You can also sprinkle them on top and garnish the glass with a sliced strawberry. It will make it look super pretty and inviting!
