For the nut parmesan

  • ¼ cup cashew nuts
  • ½ tsp garlic powder
  • 3 tbsps hemp hearts
  • 1 tbsp miso paste
  • 1 tbsp nutritional yeast

For the dressing

  • 1 tbsp capers
  • ½ cup cashew nuts (soaked)
  • 2 tsps dijon mustard
  • 1 clove garlic
  • ⅖ oz lemon (juiced)
  • ¼ cup water

For the protein groutons

  • 1 cup chickpeas (rinsed and drained)
  • 2 dashes dried smoked paprika
  • 2 dashes garlic powder
  • 1 tsp olive oil
  • 2 dashes sea salt

For the lettuce

  • 2 heads head romaine lettuce (finely chopped)


  1. The nut parmesan is optional, if you want to make it add all the ingredients to a food processor and pulse until you get a smooth mixture.
  2. To make the dressing, add the dressing ingredients to a food processor and blend until you get a smooth mixture.
  3. For the protein croutons heat up the oil in a skillet and add the chickpeas, stir fry until slightly brown on the outside and a bit crunchy, turn off the heat and mix with the rest of the ingredients.
  4. Add the lettuce to a big bowl and and mix with the dressing, depending on how much lettuce u use, make sure you don't add too much dressing, same with the nut parmesan.
  5. Sprinkle the caesar salad with the protein croutons, enjoy!
